Adds good smoke flavor, easy to control how heavy you want the smoke to be. Tried salmon, trout so far with good results. I mainly purchased this to manage the amount of salt as most processes for curing are very high in sodium.

What a find this was at a thrift store- thought I was getting it for a large lasagna pan.... but my daughter and I tried it for smoking potatoes and fish and chicken.... SO GOOD!!! What a great kitchen addition that I will use often; as a smoker! Of course, my daughter has commondered it from me, so I will be purchasing one for myself, but both of us are very happy and will use this often.

A great idea for areas that get a lot of rain. It can leak a little smoke (I use foil to plug it up better). The drippings are hard to clean off, even when using a non-stick spray.
